Heritage & the Bounties of nature
For Elsa, food has always been far more than a passion—it is a cherished way of life rooted in family, nature, and rich island tradition.
Growing up as one of 11 children in the lush beauty of Dominica, Elsa’s culinary story began high on her family’s estate at Hopsole in the heights of Macoucherie, and later on the tranquil grounds of Batalie Estate.
Raised in a proud lineage of agriculturists, farmers, hunters, and fishermen, she developed a deep, intuitive understanding of everything the land, river, and sea have to offer.
At her mother’s side—a woman revered for her mastery of local cuisine—Elsa learned the delicate art of island food preparation.
From fresh river crayfish and dormay, to sea boo boo and conch, to traditional Dominica delicacies like coui-coui and local palm oil, she inherited a profound respect for authentic flavors and natural ingredients
